Our “Weekday Hero” Egg & Bacon Jacket is a classic family favourite that makes the most of our reliable, high-quality Country Lane Foods eggs. Whether you’re feeding a hungry crowd or just need a cosy night in, this simple spud delivers every time.
Ingredients:
2 large baking potatoes
2 Country Lane Foods eggs
4 rashers of smoked bacon
A large knob of butter
Salt and pepper
Optional: A handful of grated cheddar cheese
Instructions:
The Spud: Bake your potatoes at 200°C for about an hour until the skins are nice and crunchy.
The Bacon: While the potatoes are finishing, grill or fry your bacon until it’s extra crispy, then chop it into small pieces.
The Well: Cut your hot potatoes in half. Scoop out a little of the middle (mix that extra potato with butter and salt for a side snack!) to create a hollow “nest.”
The Egg: Carefully crack one Country Lane egg into the centre of each potato.
The Bake: Pop them back into the oven for 10–12 minutes. You want the white to be firm but the yolk to stay velvety and rich.
The Topping: Sprinkle your crispy bacon (and cheese if you’re feeling indulgent) over the top and serve immediately.
