This simple, elegant quiche is the ultimate way to showcase our Birds and the Bees eggs. Sourced from our specially selected group of UK producers, these free-range eggs provide a rich, golden filling that’s truly “egg-shaped” goodness.
Ingredients
4 Large Country Lane Foods “The Birds and the Bees” Free-Range Eggs
1 Pre-rolled shortcrust pastry sheet
100g Fresh British asparagus (trimmed)
50g Garden peas
100g Feta cheese (crumbled)
200ml Double cream
Salt and pepper to taste
Optional: A sprinkle of fresh chives
Method
Prep the Base: Preheat your oven to 200°C. Line a 20cm flan tin with the pastry, prick the base with a fork, and bake blind (using baking beans) for 10 minutes.
The Filling: In a jug, whisk together your Country Lane Foods eggs and the double cream until smooth. Our eggs are collected and packed fresh to ensure maximum quality for your kitchen.
Layer the Goodness: Arrange the asparagus spears and peas across the semi-baked pastry base. Sprinkle the crumbled feta evenly over the top.
Pour & Season: Pour the egg and cream mixture over the vegetables. Season with a pinch of salt and a generous crack of black pepper.
Bake: Lower the oven to 180°C and bake for 20–25 minutes until the filling is set and golden.
Serve: Let it sit for 5 minutes before slicing. It’s perfect served warm with a fresh garden salad!
