By using a small amount of water in a ramekin, the air fryer gently steams the egg to create a perfectly set white and a beautiful, flowing golden yolk. Paired with creamy avocado and crunchy sourdough, it’s the ultimate weekend breakfast.

Ingredients
- 2 Country Lane Foods Eggs
- 1 ripe avocado
- 2 thick slices of sourdough or your favourite bread
For the poach: 4 tbsp boiling water (2 per ramekin)
Seasoning: Sea salt, cracked black pepper, and a squeeze of fresh lemon juice
Garnish: Fresh chives or chilli flakes (optional)

- 2 small ramekins
- Non-stick cooking spray or a drop of oil
Method
1. Prep the Ramekins
Lightly grease two ramekins with oil or cooking spray. Add 2 tablespoons of boiling water to each ramekin. Using boiling water gives the eggs a head start and ensures the whites set before the yolk overcooks.
2. Carefully crack one Country Lane Foods egg into each ramekin. Try to keep the yolk intact for that perfect “pop” later!
3. Place the ramekins into the air fryer basket. Set the temperature to 180°C.
6 Minutes: For a very runny, classic poached yolk.
8 Minutes: For a soft but slightly more set yolk.
4. While the eggs are cooking, scoop the avocado into a bowl. Add a squeeze of lemon juice, a pinch of salt, and pepper. Mash with a fork until chunky and creamy. Toast your sourdough slices until golden.
5.Spread the smashed avocado generously over the toast. Once the eggs are done, use a spoon to gently lift them out of the water and slide them directly onto the avocado.
6. Garnish with fresh chives, extra black pepper, or a sprinkle of chilli flakes for a bit of heat. Serve immediately while the yolk is warm and runny.
