Air Fryer Breakfast Egg Cups

The ultimate customisable, one-pot breakfast. Packed with protein, fresh veggies, and zero mess.

Why bother with a frying pan when you can “bake” your eggs to perfection in the air fryer? These breakfast cups are ideal for busy mornings or a healthy weekend brunch. By using ramekins or silicone moulds, you keep the eggs perfectly shaped and the cleanup to an absolute minimum.

Ingredients

  • 2 Country Lane Foods Eggs 

  • Vegetables: A mix of diced bell peppers (red and yellow), red onion, and halved cherry tomatoes 

  • Greens: A small handful of fresh baby spinach 

  • Seasoning: Salt, cracked black pepper, and optional chilli flakes or fresh chives.

  • To Serve: Buttery sourdough toast or English muffins.

Equipment

  • Air Fryer

  • 2 small ramekins or oven-safe egg cups

  • Non-stick cooking spray or a little butter

Method

1. Prep the Cups

Lightly grease your ramekins or egg cups with butter or a quick spray of oil. This ensures the eggs slide out easily once cooked.

2. Layer the Veggies

Place a tablespoon of your diced peppers, onions, and a few spinach leaves into the bottom of each cup. This creates a flavorful “base” for the egg to sit on.

3. Add the Egg

Carefully crack one Country Lane Foods egg into each ramekin, pouring it directly over the vegetables. Top with your halved cherry tomatoes and a pinch of salt and pepper.

4. The Air Fryer Cook

Place the ramekins into the air fryer basket. Set the temperature to 190°C.

  • For soft yolks: Cook for 6–7 minutes.

  • For fully set yolks: Cook for 9–10 minutes.

5. Serve

Using an oven mitt, carefully remove the ramekins from the basket. You can enjoy them straight from the cup or use a small knife to loosen the edges and slide them onto a plate alongside your toasted sourdough.

Recipe Variations

  • The Cheesy One: Sprinkle a teaspoon of grated cheddar or crumbled feta on top of the egg 2 minutes before the timer ends.

  • The Meaty One: Add some precooked bacon bits or chopped ham into the bottom of the cup with the veggies.

  • The Creamy One: Add 1 teaspoon of double cream over the egg before cooking for a classic Eggs en Cocotte style finish.

Top Tips

  • Preheating: You don’t have to preheat, but if your air fryer is already warm from a previous batch, your eggs may cook 1 minute faster!

  • Freshness Matters: Using fresh eggs ensures the yolk stays centred and the white sets firmly around the vegetables.
