Ingredients
- 2 Large Country Lane Free-Range Eggs (Fresh from our UK farms!)
- 100g Plain Flour
- 300ml Semi-skimmed Milk
- 1 tbsp Sunflower or Vegetable Oil (plus extra for frying)
- A pinch of Salt
Method
The Base: Sift the flour and a pinch of salt into a large mixing bowl. Create a well in the centre.
The Golden Centre: Crack your Country Lane eggs into the well and add the tablespoon of oil.
The Whisk: Start whisking from the centre, gradually drawing the flour into the eggs. Slowly pour in the milk, whisking continuously until you have a smooth, lump-free batter with the consistency of thin cream.
The Sizzle: Lightly grease a non-stick frying pan with oil and place over medium heat.
The Pour: Ladle a small amount of batter into the pan, tilting it quickly to create a thin, even layer.
The Flip: Cook for about 60 seconds until the underside is golden. Flip it over and cook the other side for another 30 seconds.
The Serve: Stack them high and serve with your favorite toppings—we love fresh lemon and a sprinkle of sugar!
